Hand rolls have a shelf life of about thirty seconds before the nori surrenders, which is why the whole format is built around a counter. This is the biggest one Hello Nori has, 38 cushioned seats facing the chefs, with binchotan charcoal going for the kushiyaki skewers behind them. End-grain oak tops, limewash walls, a small lamp per table and black-framed glazing running floor to ceiling. There is table seating and a summer patio too, but the hand rolls are only served at the counter, so that is where to sit.
