L'Abattoir sits in Gastown's prettiest cobblestone corner, doing the quietly confident thing where it doesn't try hard because it's that good. French technique, West Coast ingredients, brick walls, candlelight, and a sun-flooded back atrium that makes the whole room feel like a good decision. The cocktail program has been collecting awards for years, and Michelin has recommended it since 2022. The bar runs late if you're not ready to leave.
