L'Abattoir sits in Gastown's prettiest cobblestone corner, doing the quietly confident thing where it doesn't have to try very hard because it's that good. French technique, West Coast ingredients, brick walls, glass panels, candlelight, and a sun-flooded back atrium that makes the whole room feel like a good decision. The cocktail program has been collecting awards since before cocktails were the kind of thing people collected awards for. Go the tasting route or build your own from the menu. Either way, lean into the wine list and let the room do the atmospheric heavy lifting. Michelin has been recommending it since 2022, which in Vancouver restaurant years is basically forever. The bar runs late if you're not ready to call it a night, and in Gastown, you rarely are.
