Tojo's is the rare Vancouver restaurant that is simultaneously a meal and a small piece of food history. Chef Hidekazu Tojo, the man credited with inventing the California Roll, has been running this Fairview institution on Broadway for decades, and the seasonal omakase from his counter is the entire argument for coming. Grab the bar seats, say the word ("omakase" means "I trust you," which is also a decent thing to practice on a date), and watch dinner unfold piece by piece, story by story, at whatever pace the chef decides the evening should go. This is special-occasion territory, more theatre than transaction, the kind of meal both of you will keep referencing for years. Reserve ahead. Request the counter specifically. Arrive curious rather than trying to seem like you know what's coming, because you really don't, and that is the whole point.
