Sumu is betting a downtown room on white charcoal. Binchotan burns hot and nearly smokeless, and it is the reason proper yakitori tastes the way it does. The room takes over 888 Burrard Street, the old Sala Thai space, built around Tokyo street-food culture and communal tables. The team has floated an omakase-level yakitori idea, and hot pot sits on the menu too, which makes this a January room as much as a summer one. Opening is set for summer 2026.
