Ancora plays a trick that takes real confidence to pull off: it marries Peruvian and Japanese flavours, ceviche and nikkei tiradito and hand-rolls, with Pacific Northwest seafood, then seats the whole production in a glass room staring directly down Burrard Inlet at the Lions Gate Bridge and Stanley Park. Time it for sunset and the windows do something that no marketing budget in the world could replicate.
