Ancora plays a trick that takes real confidence to pull off: it marries Peruvian and Japanese flavours, ceviche and nikkei tiradito and hand-rolls, with Pacific Northwest seafood, then seats the whole production in a glass room staring directly down Burrard Inlet at the Lions Gate Bridge and Stanley Park.
