CinCin earns its reputation the old-fashioned way: you climb a staircase off Robson, arrive into a warm, golden room (or the heated terrace, if you plan ahead), and immediately smell the six-foot wood-fired grill doing its work. From there, the evening more or less runs itself. The handmade pasta is the kind you photograph and then go quiet over. The grill plates are serious. The wine list runs deep enough to make you feel like you need to do research, and then you order by the glass anyway. It's polished without being stiff, and the heated terrace is worth requesting if the evening cooperates.
