Join the waitlist before you leave home (no reservations under six people, and hour-long waits are standard) and bring a debit card or cash because credit is not welcome here. Order by the QR code in waves, not all at once: the two-hour clock is real and the five-dollars-per-hundred-grams leftover fine is realer. Beef tongue first, ribeye second, and save exactly enough room for the creme brulee, which has its own fan club. Budget the full two hours; it flies.
