La Fabrique St-George is a winery inside a lounge inside a genuinely compelling rabbit hole. Tucked into Mount Pleasant, it makes natural BC wine the ancient way, fermenting in qvevri, buried Georgian clay amphorae, of which it claims the largest collection outside Georgia itself. This is either impressive or just a very good pub quiz fact, and honestly it's both. You order a flight, build a plate out of cheese and charcuterie grocery-store-style (meaning you pick what you want, which is more fun than being handed an arrangement), and settle into the warm, cosy room while someone who genuinely loves this stuff explains what you're drinking. Saturdays bring in a jazz player at no cover. That's the night to go. Come curious and stay later than you planned.
