Fable is short for farm-to-table, which is the kind of name that could have tipped into earnest but instead just makes you grin. Chef Trevor Bird built a Michelin-listed kitchen on W 4th around what BC's farms are actually producing that week, so the menu shifts with the season, except for the crispy fried chicken sandwich and the burger, which have apparently earned squatter's rights and are not going anywhere. The room is warm and low-lit and genuinely relaxed in a way that W 4th Ave restaurants sometimes promise and usually manage to ruin before the menus arrive. Dress nice if you feel like it, or don't. Nobody is checking. Order the permanent residents, try whatever the seasonal special is, and settle in. This is the rare place where casual-and-special occupy the same table without argument.
