Low-intervention wines keep pace with the kitchen. It's intimate, it's quiet, and there's a pleasant ingredient-nerdiness to the whole evening that makes conversation flow without anyone having to try. The room is tiny and the reputation is large, so book ahead. Arrive hungry, go slow, and remember you don't have to understand every ferment to enjoy it.
