The entire menu is an eight ounce striploin, a creamy green sauce and frites, $44, and that is the whole list. Owner Florence Doumet puts it plainly: "we do one thing and we do it well." It opened July 15 at 12 Water St in Gaoler's Mews, the cobblestone courtyard off Water Street that almost everyone walks past twice, with an interior by Le Studio. The Paris original, Le Relais de l'Entrecôte, has run this way since 1959.
