Pull up two stools on West 4th and let whoever is working walk you through rare single-origin leaves and ceremonial matcha, brewing each cup right in front of you and earnestly explaining why the second steep of the same leaf tastes nothing like the first. (They're not wrong.) There are unexpected kombuchas, too, for when the mood shifts. It is warm and unhurried and low-octane in the best possible way, the kind of place that turns a rainy afternoon into a conversation you didn't plan to have but needed. Ask the dumb questions. They love the dumb questions. You will leave knowing more about water temperature than you ever expected to, and probably carrying a bag of leaves you'll treasure at home.
