Make Your Own Truffles at Mon Paris on Nov. 22

By Date Spark team · Published

A cooking class is one of the easier dates to say yes to: you have a job to do, something to talk about, and dessert at the end. On Sunday, November 22, chocolatier Geoseph Domenichiello teaches a ganache figs and truffle-making class at Mon Paris Patisserie on Beresford Street in Burnaby, from 6pm to 9pm. A seat is $95, tax and fees included, and the class is capped at six to eight students.

What you make and take home

There are two recipes. The first is dried figs poached in wine and filled with chocolate ganache. The second is a classic hand-rolled chocolate truffle that you can change up for a range of flavours, with no tempering required, so nobody needs pastry-school hands. You leave with a dozen ganache-filled figs, more than a dozen truffles and the recipes to make both again at home.

Check the dietary notes before you book. The ganache contains dairy, the wine is cooked, and nuts are optional. The recipes have no gluten, but the kitchen and equipment are not nut-free or gluten-free. Domenichiello is a chocolate sommelier, chocolatier and bean-to-bar maker who has worked in the chocolate industry since 2008.

Booking and timing

Booking is on Eventbrite, where the organiser lists refunds up to seven days before the class, which means by November 15. With six to eight places, a pair of seats side by side can go quickly, so book together rather than one at a time. Three hours is long enough to get your hands properly chocolatey and short enough that a Sunday class does not wreck Monday.

Is it worth $190 for two

For the right couple, yes. You are paying for three hours of hands-on instruction in a small group, and you each go home with a box of figs and truffles you made yourselves. It suits a couple who already cook together, or a third or fourth date where you want something to do with your hands besides holding a drink. If one of you finds group classes awkward, a dessert crawl is the cheaper bet.

Eat something light first, because tasting is part of the job. The Crystal Mall food court near Metrotown is close by for a quick bowl of noodles or dumplings before the 6pm start.
