Published on Main Hosts Three Chefs on October 13

On October 13, 2026, Published on Main will host Three Chefs, Three Cities, a one-night tasting-menu collaboration with San Francisco's State Bird Provisions and Winnipeg's Deer + Almond. Three kitchens, one Vancouver reservation. Your browser can close two of its imaginary flight-search tabs.

Who is taking over the kitchen

Published chef-partner Gus Stieffenhofer-Brandson will cook alongside State Bird Provisions chef-founder Stuart Brioza and Deer + Almond chef-owner Mandel Hitzer. The official announcement describes a multi-course collaborative tasting menu shaped by local ingredients and the chefs' travels, with acidity, heat and spice among its intended flavours. It does not provide a course-by-course list.

There is a real history behind the lineup. Brioza first visited Published in its early days; Stieffenhofer-Brandson later cooked at State Bird Provisions. Further collaborations brought the chefs together in Winnipeg and San Francisco. The Vancouver dinner puts those existing connections into one service. This is the rare reunion where you can reasonably hope nobody brings a slideshow.

One date, a specific booking

The dinner takes place at 3593 Main Street. Follow the reservation link on the Three Chefs, Three Cities event page, rather than assuming a regular à la carte booking gets you the collaboration. Confirm the price, seating time, inclusions and dietary arrangements in the booking process. We have not independently verified a final ticket total or session time, and an ordinary tasting-menu price should not be substituted.

Its general reservations page gives a phone-contact window of 2 p.m. to 5 p.m. Published's own homepage lists its Michelin star and No. 17 placement on North America's 50 Best Restaurants for 2026. That is useful context for the venue, not a promise that your October 13 menu will include any dish you have seen on Instagram. Screenshots, tragically, are not legally binding dinner orders.

A dinner worth giving the evening to
